Beyond our two everyday tamales, Maggie makes these to order for parties, holidays and anyone who wants something special.

Minimum order is one dozen (12) tamales for $60 per flavor, and custom orders must be paid at least two days in advance of your order date. Delivery is available for an additional fee based on mileage. Request a quote or call (469) 888-8398.

Oaxacan Chicken & Mole Tamales

A culinary journey to the heart of Oaxaca. Delicate, silky corn masa layered with tender, hand-shredded chicken breast slow-simmered in our complex, rich house-made Mole Negro, crafted from Mexican cacao, toasted chilis and aromatic spices. Hand-wrapped in a vibrant banana leaf and gently steamed, which gives the tamal a subtle smoky, herbal note and a fragrant, deeply savory flavor.

What you are actually eating

The masa. Fresh corn masa, gluten-free, seasoned and whipped until it is light enough to steam tender. Not too much of it: reviewers notice the “amazing (not too much) masa” because the filling is the point.

Pork in red salsa. Slow-cooked pork pulled into a red chile salsa with a little kick. Our most-ordered tamal and the one people fight over at holiday tables.

Chicken in green salsa. Chicken breast, no fat, in a bright tomatillo salsa verde. Clean, moist, and mild enough for kids and cautious eaters.

Burritos. The same slow-cooked fillings in a flour tortilla, sized for lunch. Offices love mixing a few in with the tamales.

Good to know

How big are the tamales?

Big. Reviewers use the words “huge” and “well filled”, and they mean it. Two tamales are a full lunch for most adults; three is a hearty dinner portion. See how many tamales per person for party math.

Are the tamales gluten-free?

Yes, by recipe: the masa is corn, with no wheat. We are not a certified gluten-free facility, and burritos with flour tortillas are made in the same kitchen, so please tell us about celiac guests when you order and we will handle them carefully.

Are the tamales spicy?

The pork in red salsa has a gentle kick that most people describe as “just right”. The chicken in green salsa is mild. For a mixed crowd we usually suggest half and half, with extra salsa on the side for people who want more heat.

Can I mix pork and chicken in a dozen?

For catering orders, yes, and we label them clearly. On DoorDash the menu lists each filling separately, so order a half dozen of each if you want both.

Do you make sweet, vegetarian or other fillings?

Yes, to order: see the custom-order tamales above (rajas con queso, roasted bell pepper and cheese, artisanal beef, Oaxacan chicken and mole, banana leaf pork rib, and plant-based vegetarian or vegan). Minimum one dozen per flavor, $60, paid two days in advance. Our menu is pork and chicken. For large orders, ask in the quote form and Maggie will tell you what she can do for your event.

How do I reheat leftovers?

Steam them, husk on, for a few minutes, or wrap them in a damp paper towel and microwave. Full instructions are in how to reheat tamales.
